PGFY Ginger snap cookies


2-1/2 cups all-purpose flour (12oz/340g)

2 -teaspoons baking soda(for the spread)

1- teaspoons baking powder(for the (rise)

2- teaspoons organic ground ginger

1 teaspoon organic cinnamon

1/2 teaspoon organic ground cloves

1/2 teaspoon salt

3/4 cup unsalted butter, softened(6oz/170g)

1 cup granulated sugar (7oz/200g)

1/4 cup dark molasses (2.75oz/80ml)

1 large egg, at room temperature

1/2 cup finely chopped raw organic ginger

 1/2 cup cane sugar (3.5oz/100g)

1 teaspoon cinnamon


Directions


1.   Preheat oven to 375°F.

2.   Mix flour, baking soda and spices together in and set aside.

3.   Beat butter and granulated sugar with an electric mixer until light and creamy-(hint- add teaspoon of baking powder mixed with half teaspoon of water to butter and sugar while mixing for enhanced creaming.

4.   Beat in molasses and egg.

5.   Add previously set aside dry ingredients to the batter. Mix on low speed for one full minute or until soft moldy texture is formed

6.   Gently stir in finely chopped ginger.

7.   Scoop ginger dough using 5 ml measurement spoon. Roll dough into balls and dip half of the dough into cane sugar and cinnamon blend

8.   Place ginger balls with sugar side facing up -two inches apart on baking sheets Bake 12- minutes(Baking time may vary based on oven type- convectional vs electric or gas oven). Remove from oven and let stand 1 minute. Cookie will be barely hard on the surface, and remain soft and chewy. Allow to cool completely on baking sheet at room temperature for another 5-10 minutes.

The top of cookies snaps open and flattens as cookies cool.
